All of our potatoes are sourced locally from Pennsylvania.
The process of mashing cooks down the potato starch converting it to sugars.
Champagne yeast is added during the fermentation process to convert sugars to alcohol.
Boyd & Blair is tripled distilled in our 1,200 liter copper pot still with all segments of the runs being cut by taste.
“Single Batch” means tails are removed
What we are left with is a tank of hearts at 95% (190 proof). This is diluted to 60% and distilled again. This cleans up the alcohol (makes it more smooth). Heads, hearts and tails cuts are done by taste again since we added water.
For every single batch of vodka, there are three parts produced. The first part is called the “heads.” These toxic, bitter alcohols are discarded.
The “hearts” flow next. Naturally sweet, ours are collected one batch at a time.
The final part is the “tails.” Most distillers recycle these musty alcohols to increase their yield. Not Boyd & Blair. We bottle only the hearts.
Every bottle of Boyd & Blair is filled, corked, waxed and signed by hand.
