Grown Ocean

Make Oleo Saccharum in punch bowl first. Add warm water to dissolve the sugar. Then add vodka, orange liquor, lemon juice, and cranberry compote. Mix well. Add large block of ice, and then slowly pour sparkling wine in. Give gentle stir as not to lose the bubbles. Serve over ice.


Oleo Saccharum:

Muddle the peels of the oranges and lemons with sugarĀ until and sugar changes color, and sticks together. Let sit for at least a half an hour prior to using.


Cranberry Compote:

Heat water, cranberries, and sugar until the cranberries start popping. Remove from heat, toss in the cinnamon sticks. While cooling add 1/4 the vodka to keep it liquid.

For individual cocktail serving:

Shake all ingredients with ice. Strain into cocktail glass or champagne flute. Top with sparkling wine. Garnish with a lemon twist.

  • 750ml of Boyd and Blair
  • 4oz Orange Liquor
  • 12oz Sparkling Wine
  • 4oz Lemon Jiuce
  • 16oz warm water
  • Oleo Saccharum
  • Cranberry Compote


  • Oleo Saccharum
    • Two oranges
    • Three Lemons
    • 10 oz sugar


  • Cranberry Compote
    • 1 cup cranberries
    • 1 cup water
    • 1 cup sugar
    • 2 cinnamon sticks
